BBQ sauce & summer go hand in hand and this recipe is another great way to utilize leftovers from my Crispy Crockpot Jalapeno Pork Carnitas.

I love BBQ sauce just as much as the next guy but the more I experimented with my diet the more I realized the sensitivity I have to sugar, and unfortunately sugar-free BBQ sauce is hard to come by. Nonetheless, I am lucky that all of my food sensitivities are just that – sensitivities. Nothing I eat is going to kill me, but some foods tend to take the wind out of my sails. Dairy cultures, gluten & sugar are 3 of the more common problem sources for individuals, which is why programs like the Whole30 & Paleo suggest eliminating them. The purpose for cutting these out is not because those foods are inherently bad, they just happen to be more prevalent in dietary problems. Every-body (heh) is different;  take my boyfriend for example. He’s the type of person who can eat an entire cake without batting an eye, whereas that kind of indulgence would leave me comatose for the day. With that being said, all of my food choices are made based on my previous experiences & my body’s reactions; what works for me may not work for you, and that’s alright! The dieting process is truly a process and one can only learn through trial and error. I personally benefit from cooking because I like having control of the ingredients I use in my kitchen to create healthier versions of my favorite dishes.

While I have no qualms about the occasional indulgence, one of the best ways for me to make healthier choices is by carefully reading the labels on the sauces I purchase.  For Paleo, I try to find sauces that eliminate sugar and use maple syrup or honey as the sweetener. Even these natural sugars can leave me feeling less than perfect, but the effects are not as pronounced as those from cane or artificial sugars.

BBQ Pork Sandwiches with Cilantro Lime Coleslaw

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Serving Size: 4

Ingredients

  • Sweet Potato Buns
  • 1 Large Sweet Potato
  • 1 Tbsp oil
  • BBQ Pork
  • 1 Tbsp Oil
  • 2-3 Cups leftover Crockpot Pork Carnitas
  • 4-6 Tbsp BBQ Sauce of Choice (I do 2 Tbsp per cup of pork)

Instructions

  • Sweet Potato Buns
  • Preheat Oven to 400
  • Line a baking sheet with foil or parchment paper, lightly coat with olive oil or fat of choice and lay out the sweet potato slices, I typically cook 8 at once (4 burgers). Optional: Sprinkle with cumin. Bake for 20-25 minutes.
  • BBQ Pork Heat Oil in saucepan, Add pork to heat through and get crispy.
  • Add BBQ Sauce to pan, stir to coat.
  • When buns have cooled, construct your sandwich & top with Slaw. I like to eat mine open faced.
