Peanut Butter Chocolate Chip Oat Snack Bites (Gluten Free)

These healthy no-bake Peanut Butter Chocolate Chip Oat Snack Bites are the perfect toddler snack, breakfast on the go, or after sweet treat!

Ingredients
  

  • 1/2 C All natural peanut butter
  • 1/3 C maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp collagen peptides sub protein powder)
  • 1 1/2 C gluten free rolled oats
  • 2 tbsp flax seeds sub chia seeds
  • 1/2 tsp cinnamon
  • 1/3 c mini chocolate chips allergen free if possible
  • pinch of sea salt

Instructions
 

  • In a large bowl, add the peanut butter, maple syrup and vanilla. Stir until smooth and well combined.
  • Add the oats, flax seeds, collagen, cinnamon, chocolate chips and a pinch of salt, if using. Stir until the dry ingredients are evenly coated with the wet mixture.
  • Line a baking sheet with parchment paper. Scoop out a heaping tablespoon of the mixture and roll into a 1 ½-inch balls. Transfer to baking sheet. Continue until all the mixture is used up.
  • Chill in the fridge for at least 20 minutes to firm up. Store in an airtight container and enjoy!
