This recipe pairs great with my Best Ever Brussels Sprouts, and when served over rice mimics a tasty little stir fry.
Easy BBQ Chicken Kabobs
Ingredients
- 1 lb chicken breast, cubed
- 1 pineapple, cubed
- 1 red pepper, largely diced
- 1 red onion, largely diced.
- 1 C BBQ Sauce
Instructions
- Start by dicing your ingredients. It is important to cut your ingredients in similar sizes in order for them all to lay on the grates evenly when place on the skewer.
- Preheat Grill to medium heat (350-400 degrees).
- While the grill is heating, assemble the skewers. Build 5-6 skewers with red pepper, onion, chicken, pineapple and repeat. When the skewers are assembled brush with desired amount of BBQ sauce.
- When the grill is hot, oil the grates by dipping a paper towel in olive oil. Place the towel between tongs & rub the grates with the oiled towel. Once complete, place the skewers on the grill
- Cook for 7 minutes before flipping. Cook for an additional 3-5 minutes or until the internal temp of the chicken reaches 165 degrees Fahrenheit. If desired, pull off the grill between flipping & apply additional BBQ sauce.
- Serve skewers over jasmine or cauliflower rice. Pair with my best ever Brussels Sprouts & Garnish with cilantro.
