Finger Foods, one of my faves! Not to mention “crispy” should be my middle name. My mom always gives me a hard time because that is the #1 word I use to describe my favorite parts of a dish! I’m all about that that crispy texture. Which is why I basically ate a whole tray of these during recipe testing. These potato skins are on the extra crispy side & full of flavor.

These babies are super diverse. GREAT for a game day appetizer to serve a crowd, but also filling enough to make a meal by simply adding a salad or some roasted veggies to the side!

Healthy Crispy BBQ Pork Potato Skins

Ingredients
  

  • 4 Russet Potatoes cleaned
  • 1 tbsp olive oil Sub: Avocado oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 C shredded pork (see notes)
  • 1 Jalapeno sliced. Optional Garnish
  • 1 C BBQ Sauce
  • 1 container Plain Greek Yogurt Optional: Dairy Free
  • cilantro optional garnish
  • 1 avocado sliced optional garnish
  • 2 green onions optional garnish

Instructions
 

  • Preheat oven to 400. *Optional Boiling Instructions in Notes*
    Prick potatoes all over with a fork and rub generously with the olive oil, then season generously with salt and pepper. Place potatoes on a rimmed baking sheet and place in the oven until the skin is crispy and the inside is soft, about 70 minutes. When done, remove and let cool.
    Raise the oven temperature to 500F.
    Cut the potatoes in half. Leaving 1/4 inch of flesh attached to the skin, scoop out the flesh, saving the flesh for another use. Brush the inside of the potatoes with a little olive oil and season inside with a little salt and pepper. Return the potatoes to the oven and cook, about 5-7 minutes per side, until skin is crisp.
    Remove and fill with Shredded Pork. Top with BBQ Sauce, Jalapeno, cilantro, avocado, green onion & a dollop of greek yogurt. Serve. 

Notes

For Pork: I recommend the Costco brand pulled pork. It is Whole30 compliant & can be found in the refrigerated section.  To Cook your own, try my crockpot pork carnitas. 
Boiling Options: Boil Potatoes for about 8 minutes. Once boiled place in an ice bath to prevent additional cooking. Dry completely before completing the additional oven steps.
