One of my dearest friends, is what we refer to as the ‘pizza monster’. She can crush pizza any time, day or night & even incorporated pizza into her pregnancy announcement as they introduced the newest ‘homeslice’ to their family. I know she is just cringing at the fact that I’m posting a recipe like this, as she is a firm believer of the classic pizza pie.
She was with me the first time I ordered this pizza at a local spot in Steamboat Springs, and claimed it as the best pizza I’d ever tasted & I stand by that statement still today. Although I am also a fan of the classic pizza toppings, I like will eat about anything that is topped brussels sprouts, goat cheese & truffle oil.
I wanted to create a gluten free version, full of sustainable & organically sourced products in an effort to feel a little better about myself with I top every last piece of this pizza (which has happened on multiple occasions). It’s hard to resist. I hope you enjoy!!
Ingredients
- 1 Pre-made Gluten Free, Whole Wheat or Cauliflower Crust (8-10 inch)
- 2-3 Tbsp Garlic infused olive oil
- 1 Tbsp Ghee (substitute olive oil)
- 1/2 C Onion, thinly sliced
- 1 C shaved brussels sprouts
- 4 slices prosciutto
- 1/3 c mozzarella, shredded
- 1/4 c goat cheese, crumbled
- 1 handful arugla
- 1 TBSP truffle oil
- salt
Instructions
- Preheat oven based on the crust instructions
- In a small skillet over medium heat, melt the ghee. Add sliced onions, season with a pinnch of salt & allow the onions to caramelize. This will take around 6-8 minutes.
- Add the brussels sprouts to the pan,and allow them to soften & heat through. Do not cook longer than 2 minutes. Remove the pan from the heat.
- Now let's top the pizza. Begin by spreading the garlic infused olive oil on the crust, this is your sauce. If you do not have garlic olive oil. You can create your own by sauteing 2 cloves of minced garlic in 3 TBSP of olive oil until fragrant.
- Top the garlic olive oil with mozzarella. Follow the mozzarella with the onion & Brussels sprout mixture.
- Next add the prosciutto & goat cheese. Finish the toppings off with a handful of arugula.
- Cook the pizza for the desired amount instructed on the crust package.
- Upon removal from the oven, drizzle the pizza with truffle oil and enjoy!
