Chocolate Covered Snicker Dates

These chocolate covered Snickers dates are stuffed full of creamy peanut butter & crunchy peanuts then coated in our favorite chocolate. I promise that they taste even better than an actual Snickers bar. Gluten Free & Dairy + Refined Sugar Free Option based on your chocolate choice.

This recipe was born when I was pregnant and trying to eat a LOT of dates. Personally I have never really enjoyed the texture of a date so when I was pregnant I created these to increase my date consumption. Adding the crunch of the peanut and the hardened chocolate coating give these bite size snacks the perfect treat.

This recipe is great because while sweet, it is made sweet by the natural sweetness of the Medjool Dates. Which makes this recipe refined sugar free.

Here’s What You Need

These incredible chocolate covered Snickers dates taste just like a Snickers bar and are made with real, whole-food ingredients. And want to know the best part? You only need 5 simple ingredients that you likely already have in your kitchen. Here’s what you need:

  • medjool dates – you can buy medjool dates that are already pitted or pit them yourself (it’s super easy).
  • peanut butter – I prefer drippy/runny natural peanut butter but you can use any nut or seed butter you like. Just make sure to check your ingredients. I like nut butters that are nuts, salt & maybe some oil. Nothing else.
  • peanuts – The salty crunch of the peanuts MAKE this recipe. Try using a different nut if you have a peanut allergy to add some crunch.
  • dark chocolate chunks or chocolate chips – I love HU KITCHEN chocolate Hunks or chips to keep this paleo/clean. Lily’s Baking Chips are also a good low sugar option.
  • coconut oil – this is used to help melt the chocolate and helps it to become thinner, which makes it easier to dip the dates.
  • flaky sea salt– this is totally optional but will definitely take these tasty morsels up a notch.

How to Store Snickers Dates

I recommend storing these bites in an airtight container in the fridge. I personally think they are best served RIGHT out of the fridge.

How to make Snicker Dates

  • Slit each date with a knife and remove the pit.
  • Fill each date with peanut butter. You may need more or less depending on how big your dates are.
  • Next stuff each date with peanuts, as many as you can fit. Pushing them down into the peanut butter.
  • Place the dark chocolate and the coconut oil in a microwave safe bowl and melt in the microwave for 1 minute. Stir and then continue melting in 15 second increments, stirring between each. It shouldn’t take longer than 1-2 minutes total.
  • With the opening facing down (into the chocolate) Dip each date into the melted chocolate. You could also use a spoon and lather the melted chocolate over the date. I prefer to dunk for full coverage.
  • As soon as the dates are coated, sprinkle salt flakes over top.
  • Place dates in the fridge and allow the chocolate to harden.
  • Once set, transfer to an airtight container and store in the fridge for up to 7 days.
