We love roasted potatoes in this house, but in the summer when we are grilling outdoors the last thing I want to do is turn on my oven in the summer heat. That is where this recipe on grill top foil potatoes comes in. This recipe has quickly become the staple side dish to our favorite grilling recipes, like steak, pork tenderloin and grilled kielbasa!
Seasoning your potatoes.
First and foremost. Never ever ever ever ever, under season your potatoes. That’s a huge no no in my opinion when it comes to flavorful foods. Potatoes are bland and need salt and seasoning. Promise me you’ll comply!
I’m calling for Seasoning salt in this recipe. My favorite seasoning salt brand (because it’s free of weird additives), is Redmond Salt Seasoning Salt. I also generously season my potatoes with garlic powder (always). If you don’t have seasoning salt, you can swap for any of the other types of seasonings below to switch up the flavor palate.

- Meat and Potato Seasoning
- Greek Seasoning
Ghee vs. Butter
I prefer ghee but you can swap out based on your preference, but before you do consider some of the benefits of cooking with ghee:
Ghee has a higher smoke point when compared to butter, so it doesn’t burn as quickly. This is perfect for sautéing or frying foods. Butter can smoke and burn at 350°F (177°C), but ghee can withstand heat up to 485°F
Ghee separates milk from fat, this butter substitute is lactose-free, making it better than butter if you have allergies or sensitivities to dairy products

Grill Top Foil Potatoes
Equipment
- aluminum foil
Ingredients
- 4 C yellow or red potatoes, diced into 1/2 inch cubes
- 1/2 yellow onion, sliced
- 3 tbsp ghee
- 1 tsp garlic powder
- 1 tbsp seasoning salt
- 1/2 tsp salt
Instructions
- In a large piece of aluminum foil, place onions on the bottom, top with potatoes, ghee & seasonings. Bring edges of foil together to enclose the package, covering completely, then crimp to seal package closed.
- Heat grill to medium heat (around 400°) Place foil packages near the part of the grill with the least indirect heat and cook, moving package around occasionally for even cooking, until potatoes are tender, 30–45 minutes.
- Remove from grill, allow to cook for a couple of minutes before opening the foil. Be mindful of steam! Toss the potatoes and onions then serve.
