Okay so this isn’t a “wow, you tried so hard” dinner, it’s the opposite. This is a “dinner’s on the table and nobody had to think too hard” dinner. I took the lazy lasagna concept, built on frozen ravioli instead of noodles, and swapped the ricotta for blended cottage cheese because why wouldn’t I take a free protein upgrade when it tastes basically identical.
End result: comfort food, 40 minutes total, zero fuss, and around 46g of protein per serving. Exactly the kind of dinner that gets made on repeat around here.

Why this works
Ravioli instead of noodles means you skip boiling pasta, layering, and the whole production. The ground beef and cheese do the heavy lifting on protein, and blending the cottage cheese smooth means nobody’s picking out weird curds, it disappears into the layers exactly like ricotta would, just with way more protein per scoop and way less fat.
The swap
Original recipe calls for ricotta. I blended cottage cheese until completely smooth (regular blender or food processor, 30-60 seconds) and used it 1:1 in its place. That’s it, that’s the whole hack.’

Notes
- Use a 2% or greater cottage cheese, it blends smoother than fat-free and holds up better once baked
- Don’t skip the blending step, the texture matters here
- This reheats well for lunches, which is half the reason I keep making it
