These healthy no-bake Peanut Butter Chocolate Chip Oat Snack Bites are the perfect toddler snack, breakfast on the go, or sweet treat!

These Peanut Butter Chocolate Chip Oat Snack bites, also known as “energy balls” are a great snack for both adults and kids as a healthier alternative to store-bought granola bars/protein bars. They are made healthier by using maple syrup as a sweetener and are full of ingredients you may already have in your pantry. They are great for school lunches, road trips or just as a quick grab and go snack!

These energy bites are loaded with wholesome ingredients like oats and flax seeds, packed with some protein from collagen, and some healthy fats from the peanut butter. They are super simple to make and don’t require any baking which is always the best for anyone like me who isn’t crazy baking.

Can You use alternative nut butters?

Yes! Any nut butter in this recipe would work. Try Cashew, almond or even sunflower butter.

How to store the oat bites.

Store in the fridge in an airtight container for up to 7 days. You can also freeze these and keep them in the freezer for up to 3 months. Pull out and let thaw at room temperature or in the refrigerator over night.

Ingredients
  

  • 1/2 C All natural peanut butter
  • 1/3 C maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp collagen peptides sub protein powder)
  • 1 1/2 C gluten free rolled oats
  • 2 tbsp flax seeds sub chia seeds
  • 1/2 tsp cinnamon
  • 1/3 c mini chocolate chips allergen free if possible
  • pinch of sea salt

Instructions
 

  • In a large bowl, add the peanut butter, maple syrup and vanilla. Stir until smooth and well combined.
  • Add the oats, flax seeds, collagen, cinnamon, chocolate chips and a pinch of salt, if using. Stir until the dry ingredients are evenly coated with the wet mixture.
  • Line a baking sheet with parchment paper. Scoop out a heaping tablespoon of the mixture and roll into a 1 ½-inch balls. Transfer to baking sheet. Continue until all the mixture is used up.
  • Chill in the fridge for at least 20 minutes to firm up. Store in an airtight container and enjoy!
