I love meal planning & picking out recipes to cook for the week ahead. You may call me crazy, or you may share my excitement for recipe planning but either way- this post is here to provide easy inspiration for the weeks to come. I’ll be updating this post week, by week as I pick out meals for this round of Whole30. Here is what you can expect from my planning

Breakfast: I like to meal prep one breakfast for the week. Typically I do this on Sunday. This allows me to have something ready to heat up, with minimal work or cleanup on busy weekdays.

Lunch/Dinner: I’m cooking for 2 adults + a soon to be toddler. Recipes typically make 4-6 servings and because of this, my lunches are usually made up of last night’s dinner leftovers. Week One

Breakfast

Sausage & Hashbrown Casserole from 40 Aprons

Lunch/Dinner

Day 1: Sausage & Chicken Gumbo
How to Serve: Over Cauliflower Rice

Day 2: Grain Free Chicken Parm – The Defined Dish Cookbook (remove the cheese)
How to serve: Serve Over zoodles, spaghetti squash or hearts of palm pasta. Serve with side salad.

Day 3: Whole30 Panang Curry Chicken Noodle Bowl
How to Serve: Over Spaghetti Squash

Day 4: Paleo Swedish Meatballs
How to Serve: Over mashed potatoes & with a green vegetable.

Day 5: Salsa Verde Shredded Beef
How to Serve: Over Cauliflower Rice with burrito bowl fixins.

Week Two

Healthy Baked Egg Cups

Lunch/Dinner

Day 1: Buffalo Chicken Chili
How to Serve: With Cilantro & Green Onions.

Day 2: Whole30 Steak & Frites
How to serve: With a Kale Salad

Day 3: Crockpot Pork Carnitas
How to Serve: On Jicama Tortillas with cilantro lime slaw.

Day 4: Loaded Pork Carnitas Fries
How to Serve: Use leftovers from the pork carnitas for this recipe!

Day 5: Whole30 Meatloaf
How to Serve: with Mashed Potatoes & green beans.

Week Three

Chorizo & Green Chile Breakfast Bake

Lunch/Dinner

Day 1: Whole30 One Pan Chicken & Broccoli Alfredo
How to Serve: Over Spaghetti Squash

Day 2: Whole30 Harvest Chicken Salad
How to serve: As is!

Day 3: Sheet Pan Steak Fajitas
How to Serve: On Jicama Tortillas or as a burrito bowl over cauliflower rice.

Day 4: Creamy Italian Sausage & Potato Soup
How to Serve: With a salad full of leafy greens.

Day 5: Pepperocini Beef Stir Fry
How to Serve: over cauliflower rice.

Week Four

Day 1: Swedish Meatballs
How to Serve: With Mashed Potatoes & Green Beans

Day 2: Curried Chicken Cauliflower Rice Soup

How to Serve: Over Cauliflower rice.

Day 4: Pineapple Ginger Chicken
How to Serve: Over Cauli Rice or a baked sweet potato.

Day 5: Sesame Chicken
How to Serve: over cauliflower rice with steamed broccoli
