Do you ever feel like you can’t find balance? Like your work is stressful, your free time is all accounted for, and you can’t remember your last good night’s sleep? That has been my 2018. I’ve lacked balance, control & creativity and it’s been a little while since I’ve felt this out of whack.
This weekend marked the first Plan-free weekend of the new year, so I made it a priority to rest, reset & get back on track. I spent time reading, browsing the internet, filling out my new planner and just genuinely enjoying a little unstructured free time. And as I write this on Sunday night, I am already ready feeling excited to wake up tomorrow and start the new week. This is the motivation I’ve been lacking since we kicked off the new year.
Speaking of the new year, I wanted to take a little time to address it. “The New Year.” It evokes a sense of hope. It’s a time for resolutions & fresh beginnings, a time to start anew. Over the last 2 years, I’ve treated each month as a new start, with new goals & intentions. Truthfully, the new year hasn’t possessed the same magnitude for me as it once did, and this applies particularly to eating resolutions. But, I do have a theme in mind, a thread I’d like to see weave its way throughout my entire 2018: Be present.
With that being said, my blogging frequency may change a little bit. And quite honestly, I’m not sure if that means the blog will be seeing more of me or less of me. And that is because I am in the process of deciding where I want the blog to fall into my goals this year. I want to grow & connect but I want to do it organically, unforced. I want to care less about what strangers think of me and put that energy into the immediate relationships in my life. Credit where credit is due, much of this approach came about after a recent reading of the book “Present Over Perfect”. I’m not really sure where I’m going with all of this, but I guess my point is that – this year is about living life & being present in the day to day. I can’t tell you what it will look like, but I’m looking forward to the journey.
But something that won’t ever change? My love for cooking. So here to kick off the 2018 year are these easy peasy, meatballs.

Ingredients
- 1 1/2 C Tomatillo or Verde salsa
- 1 lg avocado, diced into cubes (about 16)
- 1 lb ground turkey (beef or pork, optional)
- 1 C almond flour
- 1 egg
- 2 TBSP chopped cilantro
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp cumin
- 2 garlic cloves, minced
- 1/2 tsp salt
Instructions
- Preheat oven to 350 degrees
- In a mixing bowl combine all turkey, almond flour, egg, cilantro & spices.
- Construct small 1/2- 1 inch meatballs, while wrapping the meatball mixture around one avocado cube. Place meatballs in 9x9 cooking dish.
- Pour salsa over meatballs, cover with foil & place in oven.
- Bake for 25 minutes, uncover & cook for an additional 5 minutes.
