Cashew Pork Lettuce Wraps

Ingredients

  • 1 LB ground pork
  • 2 tbsp avocado oil
  • 1 shallot, finely diced
  • 3 cloves garlic, minced
  • 1 tsp ginger paste (or minced)
  • 1/2 C. shredded carrots
  • 1 C. shredded cabbage
  • 1/3 C diced cashews
  • 2 Tbsp coconut aminos
  • 2 tsp rice wine vinegar
  • 1 tsp fish sauce
  • 2 tsp sesame oil
  • 12 leaves bibb or butter lettuce
  • Optional Garnish
  • Avocado
  • Bean sprouts
  • Green onion
  • Toasted sesame seeds
  • Sweet Sesame Sauce
  • 1/4 C Coconut Aminos
  • 1/4 C rice wine vinegar
  • 2 Tbsp honey
  • 2 Tbsp dijon
  • 1 tsp sesame oil

Instructions

  • Wash the lettuce, prepare the garnishes & mix the sweet sesame sauce. Set aside.
  • Heat in the oil in a pan over medium heat. Add the diced shallots & cook for 1 minute or until translucent.
  • To the pan, add the garlic, ginger & carrots. Cook until fragrant, about 30 seconds.
  • Add the pork to the pan. Cook until no longer pink. About 5 minutes.
  • Next add in the cabbage & cashews.
  • Lastly add in the liquids to the pan: coconut aminos, rice wine vinegar, fish sauce & sesame oil.
  • Remove pan from heat, and serve.
