Cashew Pork Lettuce Wraps
Ingredients
- 1 LB ground pork
- 2 tbsp avocado oil
- 1 shallot, finely diced
- 3 cloves garlic, minced
- 1 tsp ginger paste (or minced)
- 1/2 C. shredded carrots
- 1 C. shredded cabbage
- 1/3 C diced cashews
- 2 Tbsp coconut aminos
- 2 tsp rice wine vinegar
- 1 tsp fish sauce
- 2 tsp sesame oil
- 12 leaves bibb or butter lettuce
- Optional Garnish
- Avocado
- Bean sprouts
- Green onion
- Toasted sesame seeds
- Sweet Sesame Sauce
- 1/4 C Coconut Aminos
- 1/4 C rice wine vinegar
- 2 Tbsp honey
- 2 Tbsp dijon
- 1 tsp sesame oil
Instructions
- Wash the lettuce, prepare the garnishes & mix the sweet sesame sauce. Set aside.
- Heat in the oil in a pan over medium heat. Add the diced shallots & cook for 1 minute or until translucent.
- To the pan, add the garlic, ginger & carrots. Cook until fragrant, about 30 seconds.
- Add the pork to the pan. Cook until no longer pink. About 5 minutes.
- Next add in the cabbage & cashews.
- Lastly add in the liquids to the pan: coconut aminos, rice wine vinegar, fish sauce & sesame oil.
- Remove pan from heat, and serve.
