If you’ve ever made Pork Carnitas you know that unless you are feeding a crowd, you end up with a LOAD of leftovers. This is actually great because you can repurpose those leftovers into new meals throughout the week.

How to make Loaded Fries: There are no rules when it comes to things like loaded fries and/or nachos. The goal is multiple layers of toppings in order for every bite to be delicious. But when it comes to toppings, get creative. Use what you have! This is a great way to use a lot of a little of ingredients you already have on hand!

Ingredients
  

Seasoned Oven Fries

  • 1 ½ lb russet potatoes about 2 large
  • 2 Tbsp avocado or olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp salt

Whole 30 Loaded Pork Carnitas Fries

  • 2-3 C pork carnitas
  • 1 Tbsp olive or avocado oil
  • 3/4 C pico de gallo or favorite salsa
  • 1 avocado, mashed
  • 1 jalapeno, sliced or diced
  • 1/4 C cilantro
  • Chipotle Aioli Recipe below
  • 1/2 C shredded cabbage sub iceberg

Chipotle Aioli

  • 3 Tbsp lime juice about 2 limes, juiced
  • 2 Tbsp tahini
  • 2 Tbsp hot sauce Recommend Cholula or Yellowbird Sriracha
  • 2 Tbsp avocado or olive oil
  • ½ tsp cumin
  • ¼ tsp salt
  • 1 tsp adobo sauce from one can of chipotles in adobo sauce
  • 1-2 Tbsp water

Instructions
 

Seasoned Oven Fries

  • Preheat the oven to 400° and line a large baking sheet with parchment paper.
  • Cut the washed potatoes into fries.
  • Place the fries on the parchment. Drizzle with oil & season with spices + salt. Toss the fries to coat with oil & seasonings. Spread the fries into a single layer.
  • Bake in the oven until the potatoes are crisp. About 30 minutes.

Chipotle Aioli

  • In a small bowl, combine all the ingredients. Add the water last based on desired consistency. Store in the fridge for up to 7 days.

Whole30 Loaded Pork Carnitas Fries

  • While the fries cook, prep your toppings. Cut up the cilantro, jalapenos, cabbage & mash the avocado.
  • With 10 minutes left on the oven timer, warm oil in a large skillet. Add the Carnitas to the pan and allow to cook for 3 minutes before flipping & allowing to cook for an additional 3 minutes. This step is to warm the meat & create a crust. You can eliminate this step by heating in the microwave.
  • When the fries are cooked, remove from the oven. Top the fries with Carnitas, toppings & drizzle with chipotle aioli. Set in the middle of the table & allow everyone to dig in!

Notes

Kid-Friendly: Before cooking the fries, segment off a handful. Do not season this section with salt & limit the chili seasoning to avoid heat. Serve Fries with a few chunks or pork carnitas & mashed avocado or avocado slices.
