10 Minute Banana Pancakes

Ingredients
  

  • 1 banana
  • 1/2 C oats
  • 1 egg
  • 1 Tbsp whole milk yogurt, plain
  • 1 dash cinnamon
  • 1 C spinach, raw sub: kale
  • 1/2 tsp baking powder
  • Avocado Oil cooking spray for cooking sub; coconut oil

Instructions
 

  • Add All ingredients to a blender or food processor & blend until smooth
  • Heat a large skillet over medium heat. Spray with cooking spray or melt a tsp of coconut oil. Pour a small amount of batter into the skillet. This recipe makes 8-10 small-medium sized pancakes (pictured). Reduce the heat to low - medium.
  • When the batter begins to bubble, flip over. About 2 minutes. Cook another 2 minutes. Transfer to plate & allow to cool before serving.
  • Optional: Add toppings based on your baby's age: peanut butter, honey, fresh fruit, yogurt, etc.
