Sheet Pan Meatloaf with Baked Potatoes & Green beans

Ingredients
  

Meatloaf Sauce

  • 2 tbsp coconut aminos
  • 1 tbsp tomato paste
  • 1 tsp tobasco
  • 1 tsp yellow mustard
  • 1 tsp garlic powder

Meatloaf & Vegetables

  • 3 tbsp avocado or olive oil seperated
  • 4 small yellow potatoes
  • 12 oz green beans
  • 1/2 tsp garlic powder
  • 1 tbsp ghee
  • 2/3 C yellow onion, diced
  • 1 tsp dried thyme
  • 1 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 ½ lb ground beef
  • 1/4 c almond flour
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat the oven to 425℉.
  • Prepare 4 pieces of foil. place potatoes on foil. puncture the potatoes 4-6 times with a knife to create ventilation. Drizzle with oil. Wrap foil around potatoes & place on baking sheet. Place in the oven for 15 minutes. If using anything larger than a yellow potato, you will likely need to increase the cooking time based on the potato size.
  • While the potatoes cook, Make the meatloaf. In a large skillet heat the ghee over medium head. Add the onion and thyme & saute until translucent. Stir in the tomato paste & coconut aminos. Remove from heat & set aside.
  • In a bowl combine the beef, almond flour egg, salt & pepper with the onion mixture.
  • Divide the meat mixture into 4 portions and shape each into a football shape about ¾-inch thick. Set aside.
  • Mix the sauce ingredients in a small bowl.
  • After the potatoes have been in the oven for 15 minutes, remove the baking sheet from the oven. If using anything larger than a yellow potato, you will likely need to increase the cooking time based on the potato size.
  • Place the meatloaves on the pan and spread the sauce over each one.
    Additionally Toss the green beans with 1 tbsp olive oil & season with 1/2 tsp garlic powder. spread them out onto the baking sheet.
  • Return the baking sheet to the oven and bake for an additional 20-25 minutes or until a meat thermometer inserted into the thickest part of the meatloaves registers 165℉.
  • Top baked potatoes with desired toppings & serve.
