Growing up, I was never a meatloaf fan. I can’t exactly pinpoint or remember the reasoning behind my dislike, but my husband had the same opinion. That is until we tried a recipe for meatloaf meatballs from a cookbook author whom we adore. Turns out, we liked meatloaf & I’ve been making versions of that recipe ever since. We’ve made the loaf, the meatballs and thought a sheet pan seemed like the natura next step, ya know?

What’s in this sheet pan meal?

Despite the length of the name, this sheet pan meatloaf recipe is simple. To make it all you need is:

  • Ground Beef: Use a good quality grass fed or pasture raised beef. Bison might work here, but I wouldn’t’ recommend subbing for turkey or ground chicken. You are going to mix this with onions sauteed in ghee, thyme, tomato paste, coconut aminos, 1 egg & almond flour.
  • Meatloaf Sauce: Unlike the classic meatloaf, we are making this Whole30/ Paleo style with coconut aminos, tomato paste, tabasco (or your favorite hot sauce), yellow mustard, & garlic powder.
  • Yellow Potatoes: For quick cooking as written in the recipe, I recommend yellow potatoes, they cook more quickly then russet. If you use russet, I recommend cooking for an extra 10-15 minutes before adding the beans & meatloaf to the oven.
  • Green Beans – Not only are green beans a nice, crunchy, low-carb vegetable to round out this dish but also they provide many key nutrients. Young, tender green beans are a good source of vitamin C, dietary fiber, folate, & vitamin K.

Kick Up those Baked Potatoes.

Even on whole30, you can load up your baked potato with the below toppings. If you aren’t on Whole30 or Paleo – you can go all out!

  • Ghee or butter (not Whole30)
  • Sugar Free Bacon Bits
  • Chives or Green Onion
  • Drizzle your favorite compliant sauce: ie Ranch dressing or buffalo sauce!
  • Season with Everything But the Bagel Seasoning, Garlic Salt, truffle salt, or just plain salt & pepper!
  • Not Paleo/Whole30: Sour Cream or Plain Greek Yogurt

How to Serve this to a family

6-12 months old: As pictured below, you will see that for my 11 month old I crumbled up the ground beef. Ground meat can be a choking hazard. If you don’t feel comfortable with ground meat, try mixing it into something soft like mashed potatoes! Mash up your baked potato with a healthy fat like ghee or greek yogurt. Keep green beans whole.

For the pickier eater: Swap out the green beans for a safety vegetable. Cook times may vary. Brussels sprouts will take longer. Brocolli or cauliflower will be more comparable to the green bean cook times, if chopped into small florets. Sliced carrots will also be comparable.

Delicious meatloaf baked to perfection with potatoes and green beans. You’ll love the rich homestyle flavor in this incredible one pan meatloaf meal! A wonderful, healthy family style dinner for busy weeknights that’s paleo, gluten, grain and dairy free.

Ingredients
  

Meatloaf Sauce

  • 2 tbsp coconut aminos
  • 1 tbsp tomato paste
  • 1 tsp tobasco
  • 1 tsp yellow mustard
  • 1 tsp garlic powder

Meatloaf & Vegetables

  • 3 tbsp avocado or olive oil seperated
  • 4 small yellow potatoes
  • 12 oz green beans
  • 1/2 tsp garlic powder
  • 1 tbsp ghee
  • 2/3 C yellow onion, diced
  • 1 tsp dried thyme
  • 1 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 ½ lb ground beef
  • 1/4 c almond flour
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat the oven to 425℉.
  • Prepare 4 pieces of foil. place potatoes on foil. puncture the potatoes 4-6 times with a knife to create ventilation. Drizzle with oil. Wrap foil around potatoes & place on baking sheet. Place in the oven for 15 minutes. If using anything larger than a yellow potato, you will likely need to increase the cooking time based on the potato size.
  • While the potatoes cook, Make the meatloaf. In a large skillet heat the ghee over medium head. Add the onion and thyme & saute until translucent. Stir in the tomato paste & coconut aminos. Remove from heat & set aside.
  • In a bowl combine the beef, almond flour egg, salt & pepper with the onion mixture.
  • Divide the meat mixture into 4 portions and shape each into a football shape about ¾-inch thick. Set aside.
  • Mix the sauce ingredients in a small bowl.
  • After the potatoes have been in the oven for 15 minutes, remove the baking sheet from the oven. If using anything larger than a yellow potato, you will likely need to increase the cooking time based on the potato size.
  • Place the meatloaves on the pan and spread the sauce over each one.
    Additionally Toss the green beans with 1 tbsp olive oil & season with 1/2 tsp garlic powder. spread them out onto the baking sheet.
  • Return the baking sheet to the oven and bake for an additional 20-25 minutes or until a meat thermometer inserted into the thickest part of the meatloaves registers 165℉.
  • Top baked potatoes with desired toppings & serve.
