Whether you’re trying to get over your latest cold or you just want to give your body a little extra nourishment, this healing chicken soup loaded with nutrient-dense foods like turmeric, bone broth, and kale is sure to have you feeling better in no time.

It’s no time like the present (aka global pandemic) to load our body with immune boosting ingredients. So today we’re taking classic chicken soup and upping the ante with loads of nutrient rich ingredients. With its rich curry turmeric broth, shredded chicken, carrots, cauliflower, kale, and bright lemon juice, this soup is also completely crave-worthy.

Ingredients in the Healing Curried Chicken & Vegetable Soup

The nutritionist in me is SO pumped to talk about the magical healing properties of the ingredients in this soup! The anti-inflammatory and antioxidant powers of food are truly incredible.

  • Bone Broth – The base of this soup starts with bone broth. Bone broth is filled with vitamins, minerals, and collagen that can help support a healthy immune system.   • Turmeric – Turmeric is a potent anti-inflammatory and antioxidant spice that gives this soup its beautiful yellow color. Turmeric has also been shown to have antiviral properties which is great for fighting off the cold and flu.
  • Curry Powder– Curry powder contains a variety of anti-inflammatory spices, including turmeric, coriander, and chili powder.
  • Onion & Garlic – Did you know that these have strong antibacterial, antiviral, and antioxidant properties?
  • Carrots – Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants
  • Cauliflower- Cauliflower is an excellent source of vitamins and minerals, containing some of almost every vitamin and mineral that you need.
  • Curly Kale – Kale is widely known for being a nutritional powerhouse. It is rich in vitamins A, K, and C, as well as antioxidants.
  • Chicken – You can use either chicken breast or thighs for this recipe. The chicken will cook in the soup, and then you will simply shred it with two forks.
  • Lemon Juice – The juice of one lemon stirred in at the end of cooking helps lend a bright, light flavor to the soup, plus lemon is known to be great for supporting detoxification, as well as being high in Vitamin C.

How do you shred chicken?

Shredding chicken is a trick as old as time. All you have to do is:

  1. Once the chicken is done cooking in your soup you’ll remove the meat with a slotted spoon or tongs and place it onto a cutting board.
  2. Take two forks and pull apart the meat until your chicken is fully shredded
  3. Add your newly pulled chicken back to your soup and stir to evenly distribute. Done!

How to store, freeze & reheat this soup!

To store: If you have leftover Healing Curried Chicken & Vegetable Soup, simply store it in an airtight or container and keep it in the refrigerator for up to 5 days.

To freeze: allow the Healing Curried Chicken & Vegetable Soup to cool completely before transferring it to a freezer safe bag or container. It will stay good in the freezer for up to 3 months.

To reheat: for a hands-off option you can add the frozen Healing Curried Chicken & Vegetable Soup to your crock pot and place it on “warm” to warm it back up. or place the frozen soup in a pot & heat over the stove. Lastly, reheating in the microwave is also always an option.

Can I make this in the Instant Pot or Crockpot?

This soup will work in either the Instant Pot or Crockpot. I recommend cooking it on high pressure for 20 minutes in the Instant Pot and either 4 hours on high or 6-8 hours on low in the Crockpot. Still adding the kale & lemon juice in at the very end after shredding the chicken.

How to serve this to littles & picky eaters.

Exposing our kiddos to an array of flavors early on is ALWAYS a good idea. You can drop in a cup of organic or brown rice pasta,, if you do this add in just a little more broth as it will get soaked up by the pasta. I deconstructed this soup for my one year old by serving him pasta that soaked up lots of that yummy broth + shredded chicken & Chunky veggies.

If curry is not a flavor your family loves, you can easily split this recipe down the middle & do one pot with curry & Spices & one without.

Healing Curried Chicken & Vegetable Soup

Ingredients
  

  • 3 Tbsp olive or avocado oil
  • 1 C yellow or white onion, diced
  • 2 carrots, minced
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 tbsp garam masala sub curry powder
  • 1 tsp turmeric
  • 1 lb chicken breasts, boneless skinless sub chicken thighs
  • 2 C cauliflower florets
  • 6 C chicken bone broth
  • 1-2 C kale, chopped thin
  • 1 lemon, juiced
  • salt & pepper to taste

Instructions
 

  • Heat the oil in a large pot over medium-high heat. Add the onion & carrots. Cook until they start to soften, about 6 minutes.
  • Add the garlic, curry powder, turmeric & garam masala. Allow to get fragrant, about 1 minute.
  • Add the chicken, cauliflower and bone broth to the pot and bring it to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 mins.
  • Remove the chicken from the pot and shred it using 2 forks. Add the chicken back into the pot along with the kale. Stir to evenly distribute and allow the kale to cook for a few minutes to soften.
  • Lastly, add in the lemon juice & season to taste with salt & pepper.
