Ground Beef Stir Fry With Bok choy

Quick and healthy Ground Beef Stir — ready in 20 minutes and made with simple ingredients!

Ingredients
  

  • 1 lb ground beef
  • 3 Tbsp coconut aminos
  • 1 tbsp minced garlic
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp grated ginger
  • 1/2 Tbsp sesame oil
  • 1/4 tsp red pepper flakes
  • 1/2 tsp arrowroot powder
  • 1 Tbsp olive or avocado oil
  • 4 baby bok choy, sliced in half
  • 4 C rice or cauliflower rice for serving
  • Sesame Seeds optional garnish

Instructions
 

  • In a large skillet over medium -high heat, heat the olive oil. Place baby bok choy into a single layer and allow to cook for 2-3 minutes. Flip & repeat before removing from the pan & setting aside.
  • In the same skillet, brown the beef over medium-high heat, breaking it into small pieces, until it is browned and cooked through, about 5 or so minutes. When the beef is about halfway finished cooking, add 1 tablespoon of the coconut aminos. Once the beef is completely browned, stir in the garlic and cook 30 seconds.
  • While the beef cooks, in a small bowl, stir together the rice vinegar, honey, ginger, red pepper flakes, and remaining coconut aminos . Pour over the browned beef. Stir and cook for 1 minute. Add bok choy back to pan and toss with sauce. Allow the sauce to thicken, about one additional minute.
  • Remove from the heat, then stir in the sesame oil. Sprinkle with sesame seeds & enjoy over rice or cauliflower rice.

Notes

For Kiddos: Eliminate red pepper flakes, and serve as is. Ground beef + rice & slice up the bok choy into appropriate sized pieces.
