- In a large skillet over medium -high heat, heat the olive oil. Place baby bok choy into a single layer and allow to cook for 2-3 minutes. Flip & repeat before removing from the pan & setting aside.
- In the same skillet, brown the beef over medium-high heat, breaking it into small pieces, until it is browned and cooked through, about 5 or so minutes. When the beef is about halfway finished cooking, add 1 tablespoon of the coconut aminos. Once the beef is completely browned, stir in the garlic and cook 30 seconds.
- While the beef cooks, in a small bowl, stir together the rice vinegar, honey, ginger, red pepper flakes, and remaining coconut aminos . Pour over the browned beef. Stir and cook for 1 minute. Add bok choy back to pan and toss with sauce. Allow the sauce to thicken, about one additional minute.
- Remove from the heat, then stir in the sesame oil. Sprinkle with sesame seeds & enjoy over rice or cauliflower rice.
Notes
For Kiddos: Eliminate red pepper flakes, and serve as is. Ground beef + rice & slice up the bok choy into appropriate sized pieces.
