Ground Beef Stir Fry With Bok choy

Quick and healthy Ground Beef Stir — ready in 20 minutes and made with simple ingredients!

Ingredients
  

  • 1 lb ground beef
  • 3 Tbsp coconut aminos
  • 1 tbsp minced garlic
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp grated ginger
  • 1/2 Tbsp sesame oil
  • 1/4 tsp red pepper flakes
  • 1/2 tsp arrowroot powder
  • 1 Tbsp olive or avocado oil
  • 4 baby bok choy, sliced in half
  • 4 C rice or cauliflower rice for serving
  • Sesame Seeds optional garnish

Method
 

  1. In a large skillet over medium -high heat, heat the olive oil. Place baby bok choy into a single layer and allow to cook for 2-3 minutes. Flip & repeat before removing from the pan & setting aside.
  2. In the same skillet, brown the beef over medium-high heat, breaking it into small pieces, until it is browned and cooked through, about 5 or so minutes. When the beef is about halfway finished cooking, add 1 tablespoon of the coconut aminos. Once the beef is completely browned, stir in the garlic and cook 30 seconds.
  3. While the beef cooks, in a small bowl, stir together the rice vinegar, honey, ginger, red pepper flakes, and remaining coconut aminos . Pour over the browned beef. Stir and cook for 1 minute. Add bok choy back to pan and toss with sauce. Allow the sauce to thicken, about one additional minute.
  4. Remove from the heat, then stir in the sesame oil. Sprinkle with sesame seeds & enjoy over rice or cauliflower rice.

Notes

For Kiddos: Eliminate red pepper flakes, and serve as is. Ground beef + rice & slice up the bok choy into appropriate sized pieces.
