My Mom's Classic Beef Chili

Ingredients
  

  • 2 Tbsp olive oil
  • 1/2 C diced onions
  • 1/2 C diced green peppers
  • 1 lb ground beef
  • 2 Tbsp tomato paste
  • 3 Tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 can kidney beans drained and rinsed
  • 2 C beef broth
  • 2 C tomato juice
  • 1 C tomato sauce

Method
 

  1. In a large pot over medium heat, heat the olive oil. Add the onions and green peppers. Cook for 3-5 minutes or until soft.
  2. Add the ground beef right into the pot with the vegetables and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Stir in the tomato paste and cook for a minute or two, letting it coat the beef and vegetables.
  4. Add the chili powder, garlic powder, cumin, salt, and pepper. Stir to coat everything and cook for another minute until fragrant.
  5. Add the kidney beans, beef broth, tomato juice, and tomato sauce. Stir to combine.
  6. Bring to a simmer, then reduce heat to low. This chili is genuinely flavorful in under 30 minutes, but if you have the time, let it simmer longer to build even more depth.
  7. Taste and adjust seasoning if needed, then serve.
