The Most Simple Steak tacos

Ingredients
  

  • 8 grain free tortillas
  • 1-1.5 lb skirt or flank steak
  • 3 Tbsp avocado or olive oil
  • 1 lime, juiced
  • 1/4 C cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 2 cloves garlic
  • 1/4 tsp salt
Optional Garnishes
  • white or red onion, diced
  • cilantro, chopped
  • avocado, sliced
  • salsa
  • jalapeno, diced
  • lime
  • hot sauce

Method
 

  1. In a blender add oil, lime juice, cilantro, cumin, chili powder, paprikia, garlic & salt. Blend until smooth.
  2. Place the steak in a resealable bag or baking dish. Pour the marinade over the steak & marinate in the refrigerator for 30 minutes up to overnight.
  3. When ready to eat, Preheat grill to high heat (400-500°) & oil the grates. Grill the steak 3 to 5 minutes per side for medium rare (or 135°) or 4-6 minutes per side for medium (145°). Cooking times may vary based on thickness of steak.
    Transfer to a cutting board & let rest for 5-7 minutes. Chop into bite size pieces.
  4. While the steak is cooking I recommend warming your tortillas over an open flame or in a fry pan.
  5. Serve steak on warm tortillas & top with desired garnishes.
