The Ultimate Whole30 Burger Sauce
1/4Cmayo
2tbspketchup
2tspmustard
2tspcoconut aminossub: 1 tsp maple syrup if not Whole30
2tsp white vinegarsub: apple cider vinegar
Whole 30 Truffle Fries
2-4russet potatoes, sliced into fries
2tbsptruffle oilplus extra for finishing drizzle
1/2tspgarlic powdersub: 3 cloves garlic, minced
1/2tsp salt
1/4tspfresh cracked pepper
Instructions
Whole30 Truffle Fries
Preheat oven to 400°
Place potatoes in an even layer on a baking sheet. It is important not to overcrowd the pan if you want to achieve the ultimate crispiness!
Drizzle the truffle oil over the potatoes then add garlic, salt & pepper. Using your hands (or tongs) toss to coat the potatoes. Redistribute the fries into an even layer before transferring to the oven.Cook for 30-35 minutes. Do not toss fries, during the cooking process.
Remove from oven when done, and give a final drizzle of truffle oil & another pinch of salt.
The Ultimate Whole30 Burger
Preheat Grill to 400° (see inside cooking instructions in the notes).
While the grill preheats, place bacon on a baking sheet covered with parchment paper. Place in the oven with the fries & cook for 15 minutes.
Season patties generously with salt & pepper. I also enjoy using the Everyday Seasoning from Trader Joes, if you have it! Place patties on the grill. Cook for 5 minutes before flipping. Cook for an additional 3 minutes for medium well (or 150°). Let rest for 5 minutes before serving.
For the caramelized onions: In a small skillet, melt 2 tbsp of ghee. Add the shallot or onion & season with salt. Allow to saute for 2-3 minutes until they begin to brown. Add 1/4 C water to the skillet & allow it to steam the onions & slowly evaporate. When water has completely evaporated, remove from heat & set aside until ready to serve.
While the Burgers are on the grill combine the ingredients for the burger sauce in a bowl & prepare your toppings.
To Serve
Lay 4 pieces of lettuce leaves out to form a complete circle (basically you want to have the stems overlapping in the middle, and the soft part of the leaf as the outer part of the circle. If looking down at your lettuce circle place a burger patty at the top of the circle, on the leaf & above the stem.
Top the burger with caramelized onions, tomato, pickles, bacon & loads of burger sauce.
Fold the bottom of the lettuce bun up over the patty. Then fold in the sides. I find it helpful to take a piece of parchment paper (about the size of a true sheet of paper), place the burger in the middle of the parchment, folding the bottom half of parchment up over the burger bun, then wrapping the sides around. It's simply an added level of security.
Notes
Kid Friendly: Ground Beef can be a choking hazard for little ones. I form a special patty into a finger-like shape for grilling. Served with sliced tomato & a few french fries. When cooking your french fries, segment off a few to cook without salt. Skillet Burgers:
Heat a large cast iron skillet over medium to medium-high heat. Make sure the skillet is HOT before adding in 2 tbsp of ghee.
Place the patties in the skillet & cook burgers for 5 minutes, flip & cook another 3-4 minutes. Use a meat thermometer to determine doneness. I find it helpful to cover the skillet on the second half to eliminate a smoky kitchen.
