Whole30 BBQ Cobb Salad

Ingredients
  

  • 2 Romaine hearts, chopped or preferred lettuce type
  • 1/4 C cilantro, chopped
  • 2 C pulled pork or chicken *See Notes for Vegetarian Option
  • 2 Tbsp BBQ Sauce Whole30 Compliant
  • 1 Avocado, diced
  • 1/2 C Grape Tomatoes, diced
  • 2 hardboiled eggs, sliced
  • 1 Jalapeno, seeded & diced
  • Bacon Crumbles optional
  • 1/4 C Red Onion, diced

Whole30 Sweet Chipotle Ranch

  • 1 1/2 C W30 Compliant Mayo Sub: plain greek yogurt if not W30
  • 1 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 chipotle pepper in adobo sauce Sub: 2 tbps chipotle powder
  • 1/4 C cilantro
  • 1/4 tsp black pepper
  • 1/2 tsp dried dill
  • 2 tbsp almond milk sub: any dairy free milk
  • 1 tbsp apple cider vinegar
  • 2 TBSP pineapple Juice

Instructions
 

  • For Dressing: Add all ingredients to a blender. Blend until combined. Keep refrigerated for up to 5 days.
    In a bowl, add the pork or chicken & bbq sauce. Toss to coat.
    In a salad bowl, Assemble the salad ingredients based on your preference of items. Top with BBQ meat & dress with the sweet chipotle ranch dressing

Notes

*Easy pre-shredded meat options: For Pork, Costco & Sam's Club have Whole30 compliant shredded pork in the refrigerated section. For Chicken: Shred a rotisserie chicken. Freeze rotisserie chicken scraps & save for bone broth. 
*Vegetarian Option: Replace Meat with jackfruit for pulled pork like consistency.
