Airstream Salad

Servings 4

Ingredients
  

  • 6-8 C arugula Sub: Mixed greens
  • 2 C chipotle carnitas See notes for recipe link or Sub protein of choice: shredded chicken, ground beef or turkey.
  • 1/2 C grilled corn
  • 1/2 C Pico de gallo See Notes for easy pico de gallo recipe
  • 1/2 C Goat Cheese, shredded sub: shredded cheese of choice
  • 1/4 C roasted red peppers, diced
  • 2 Tbsp mint, chopped
  • 1/4 C pistachios
  • 1 Large Avocado, sliced

Sweet Chipotle Dressing

  • 1 1/2 C Paleo Mayo
  • 1 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 chipotle pepper sub 2 tbsp chipotle powder
  • 1/4 C fresh cilantro
  • 1/4 tsp black pepper
  • 2 tbsp unsweetened dairy free milk sub milk
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp Pineapple Juice

Instructions
 

Sweet Chipotle Dressing

  • Add all ingredients to a blender. Blend until combined. Keep refrigerated for up to 5 days.

Salad

  •  In a large skillet over medium-high heat, add 1 tbsp of oil.Add a single layer of carnitas to the skillet, do not overcrowd the pan. Allow meat to saute for at least 3 minutes before flipping, then repeat or until desired crispness is achieved.  If using frozen corn, add to the skillet and heat through about 2 minutes. 
    In a salad bowl, Assemble the salad ingredients. Mix the mint with the greens to create your base. Then add remaining ingredients on top. Remember this is your salad, add a little or extra toppings as you desire!  Drizzle with Dressing & serve.

Additional protein options: For Pork, Costco & Sam’s Club have Whole30 compliant shredded pork in the refrigerated section. For Chicken: Shred a rotisserie chicken or chopped chicken breast. Ground taco meat is also another option. 
 
*Vegetarian Option: Replace Meat with jackfruit.
 
For Pico De Gallo: Dice 2 roma tomatoes & 1 small red onion. Combine in a bowl Season with Salt. Mix with the juice of 1 lime & chopped cilantro.
