Honest Question: What did I do before we had a grill? This is our first summer with our grill and I cannot recall the last time I cooked indoors recently. Grilling makes for easy cleanup (most of the time) and that is convenience is key in my opinion. Even if you don’t have a grill, a cast iron skillet or grill pan would work great with this recipe.

Summer Steak Kabobs

Ingredients
  

  • 1-2 Lbs steak kabob meat (see notes), 1.5 inch cubes Suggested: Sirloin Steak
  • 2.5 Tbsp coconut aminos
  • 1/4 C avocado or olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp garlic powder
  • 1.5 Tbsp dried basil
  • 1 Tbsp dried parsley
  • 1/2 tsp pepper
  • 1 red onion, sliced into 1.5 inch pieces
  • 1 red pepper, sliced into 1.5 inch pieces

Instructions
 

  • If you are unable to buy pre cut kabob meat at your local meat counter. Dice desired steak into 1.5 inch cubes.
  • In a bowl combine coconut aminos. oil, lemon juice, Worcestershire, garlic powder, basil, parsley & pepper. Place steak in a large bowl, zip lock or baking dish. Pour marinade over steak, cover & refrigerate for at least 30 minutes. Marinate up to overnight.
  • When ready to cook: Preheat grill to medium-high heat (350-450°). While the grill preheats, Assemble marinated steak, onion & red pepper onto skewers. When assembling it is best to put like sized pieces next to one another to allow for all the ingredients to lay evenly on the grill grates.
  • Place skewers on the grill. Cook for 5-6 minutes, flip and cook for an additional 4-5 minutes. cook times may vary based on thickness of cuts of steak, plus desired doneness. For Medium doneness cook until steak reaches internal temp of 145°.
  • Remove from grill and enjoy. See notes below for side dish suggestions.

Notes

To Grill Potato skewers: Boil desired amount of baby potatoes until fork tender (10-15 minutes). Place cooked potatoes in a bowl, drizzle with 1-2 tbsp of olive oil. Season with garlic powder, salt & pepper (or other desired seasonings). Place on skewers. Place on grill until grill marks are showing on potato skin.
