Making food for our little ones can be time consuming & intimidating. Because of this, I came up with 3 rules in our house to keep me sane during the week. All the food I make for Charlie has to fall into one of the following categories:
- The Recipe or food takes less than 10 minutes to prepare
- The Recipe is great for meal prep. Something I can make in advance and grab for meals throughout the week.
- He eats what we eat! If I don’t have something prepared that falls into rules 1 & 2. I want to make sure I have something from our meal that he can eat. Ie: Pasta, steamed or roasted veggies, etc.
This recipe falls into Rules 1 & 2. Not only is it QUICK & EASY. It makes 8-10 pancakes that you can store in the fridge for up to 5 days. Or freeze for future meals!
10 Minute Banana Pancakes
Ingredients
- 1 banana
- 1/2 C oats
- 1 egg
- 1 Tbsp whole milk yogurt, plain
- 1 dash cinnamon
- 1 C spinach, raw sub: kale
- 1/2 tsp baking powder
- Avocado Oil cooking spray for cooking sub; coconut oil
Instructions
- Add All ingredients to a blender or food processor & blend until smooth
- Heat a large skillet over medium heat. Spray with cooking spray or melt a tsp of coconut oil. Pour a small amount of batter into the skillet. This recipe makes 8-10 small-medium sized pancakes (pictured). Reduce the heat to low – medium.
- When the batter begins to bubble, flip over. About 2 minutes. Cook another 2 minutes. Transfer to plate & allow to cool before serving.
- Optional: Add toppings based on your baby's age: peanut butter, honey, fresh fruit, yogurt, etc.
