Quick and easy delicious energy bites that are so healthy, but taste a little like little cashew cookies! (gluten free, paleo, vegan, raw, and low carb)

I am addicted to these protein balls that I found at a local coffee shop, but it’s JUST far enough away from my house that I could not justify driving there on a daily basis to get my energy bite fix. I knew I had to come up with a similar recipe at home and while these are not an EXACT replica, these cashew coconut cookie energy bites turned out to be even BETTER than the ones from the coffee shop.

Cashew Coconut Cookie Energy bites are really easy to make, even with your kiddos help and pretty delicious to eat. The entire family will love these energy bites. My toddler calls them “cookie balls” and that’s a total mom win in my book because he thinks he’s getting a super sweet treat!

Ingredients In Cashew Coconut Cookie Energy Bites

This recipe only calls for a handful of ingredients and there is absolutely no baking involved. Another major perk! In order to get the energy you want from these energy bites you want to assure you are using great ingredients:

  • Raw, Unsalted Cashews
  • Unsweetened shredded coconut
  • Organic Medjool Dates
  • Water
  • Sea Salt
  • Cinnamon

Cashew Coconut Cookie Energy Bites

Ingredients
  

  • 1 1/2 C raw, unsalted cashews
  • 1/2 C unsweetened shredded coconut plus more for rolling bites in
  • 5 lg medjool dates
  • 2 tbps water
  • 2 scoops Further Foods Vanilla collagen peptides
  • 2 tbsp almond flour
  • 1 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 C coconut butter

Instructions
 

  • In the bowl of a food processor fitted with the "s" blade, pulse the cashews, coconut and dates several times until finely chopped.
  • Add the water, salt, cinnamon, almond flour and collagen and process into a thick paste. A few tiny chunks of cashew will remain; that's fine. Add a splash more of water if needed.
  • Scoop a 2 Tablespoon portion of the mixture and roll it a ball, then roll in shredded coconut to coat (optional)
  • Melt Coconut butter in the microwave for 30 seconds, then in 10 second intervals until melted. Dollop on top of the bites & place in fridge for 30 minutes to harden.
  • Store in an airtight container, in the refrigerator for up to 7 days.
