In the bowl of a food processor fitted with the "s" blade, pulse the cashews, coconut and dates several times until finely chopped.
Add the water, salt, cinnamon, almond flour and collagen and process into a thick paste. A few tiny chunks of cashew will remain; that's fine. Add a splash more of water if needed.
Scoop a 2 Tablespoon portion of the mixture and roll it a ball, then roll in shredded coconut to coat (optional)
Melt Coconut butter in the microwave for 30 seconds, then in 10 second intervals until melted. Dollop on top of the bites & place in fridge for 30 minutes to harden.
Store in an airtight container, in the refrigerator for up to 7 days.
