This beef taco bowl makes for a quick (but extremely satisfying) throw-together dinner on busy weeknights and weekends alike!
Ingredients
- Ground Beef – you’ll need 1 pound of ground beef for this recipe!
- Spices + Seasonings – we’ll combine mild chili powder, cumin, garlic powder, onion powder, dried oregano, paprika, sea salt, and ground black pepper to make a quick, homemade taco seasoning that’ll give this taco meat & the roasted sweet potatoes a bold, Mexican-inspired flavor!
- Onions & Red Peppers– diced onions & red peppers will cook into our taco meat. They can also serve as an added garnish if used raw before serving.
- Zucchini– We are enhancing our taco meat by tossing in some extra vegetables.
- Sweet Potatoes: To make this paleo/Whole30 we are swapping rice with sweet potatoes.
- Avocado – This recipe is more than your typical recipe with avocado. We are making a delicious, dairy free, avocado crema to top this taco bowl!
- Cilantro – Always.
- Garlic – to increase the flavor.
- Pepita/Pumpkin Seeds – The avocado crema is made creamy with a nut base made from Pepitas. Sub raw Cashews.
- Lime Juice
- Salsa- What is a taco bowl without your favorite salsa? I recommend a salsa verde or Pico de Gallo.
How to jazz up your beef taco bowl.
While this beef taco bowl with roasted sweet potatoes & dairy free avocado crema comes FULLY loaded. There is always room for more toppings.
Try adding: Jalapenos, sour cream (if not Whole30), hot sauce, or spicy ranch.
Can I use Ground Turkey or Chicken instead of Beef in this taco bowl?
Yes. Swap out the ground beef for a pound of ground turkey or ground chicken.
How To make these friendly for little mouths:
- Chili Powder can be considered spicy to kiddos. Make this less spicy by roasting some of the sweet potatoes without the taco seasoning. Try garlic powder & salt only.
- Remove a serving of beef & veggies before adding in the taco seasoning. You can also rinse off the meat & veggies before serving if they do get seasoned.
- Serve with a side of brown rice or diced avocado

Ground Beef & Roasted Sweet Potato Taco Bowls with Avocado Crema
Ingredients
Taco Meat
- 1 lb ground beef sub ground turkey or chicken
- 1 C yellow onion, diced
- 1 red pepper, diced
- 1 tbsp avocado oil, seperated
- 2 small zucchini, quartered about 2 cups
- 1 Tbsp tomato paste
- 1/4 C water
- 1 Tbsp chili powder
- 1/2 Tbsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp paprika
Seasoned Roasted Sweet Potatoes
- 4 C sweet potatoes, peeled & diced into 1/2 in cubes
- 2 Tbsp avocado oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp cumin
Dairy Free Avocado Crema
- 1 avocado
- 2 cloves garlic
- 2 Tbsp apple cider vinegar
- 1/4 C avocado or olive oil
- 1/4 C pepitas sub raw cashews
- 1 tsp cumin
- 1 lime, juiced
- 1/4 C cilantro
- 1/3 C water
- 1/4 tsp salt
Garnishes & Toppings
- cilantro
- pico de gallo or salsa
Instructions
Seasoned & Roasted Sweet Potatoes
- Preheat the oven to 425°
- Place your sweet potatoes on a large baking sheet. Add the oil & Seasonings. Toss to coat all the sweet potatoes and then spread out into a single layer. You don't want any potatoes overlapping or you'll end up with steamed potatoes instead of roasted potatoes. Cook for 30 minutes, flipping halfway through.
Beef Taco Meat
- Add the ground beef, and begin to break up. Cook until the meat is partially cooked through, about 5 minutes
- Add the zucchini, cook for another 3 minutes.
- Lastly, add the seasonings, tomato paste & water. Stir to combine and cook until fragrant and the water is absorbed. About 5 minutes
Avocado Crema
- Combine all the ingredients into a food processor or blender. Blend until smooth
Assembly
- When ready to serve, place a layer of sweet potatoes into a bowl. Top with taco meat, avocado crema & any additional garnishes. Enjoy!
