Hands up who likes Mexican food?! Well I have a treat for you! These steak fajita skewers are so easy, flavorful and a fun twist on a classic fajita dish.

What’s the best steak to use for steak skewers?

Most grocery stores sell kabob meat, pre cut. It’s usually beef chuck and not always the best meat. If you are in Norther Colorado, I highly recommend you purchase your precut kabob meat from Pumpkin Creek Ranch. They use quality cuts. OR you can cut your own skewer meat using sirloin steak.

How to make a fajita marinade

  • Mix together: Coconut aminos, avocado oil, lime juice, orange juice, garlic, cumin, onion powder, paprika, garlic powder & chili powder.
  • Marinate the steak and vegetables for at least 30 minutes, up to 12 hours.

What to Serve with Steak Fajita Skewers

  • Tortillas: Make your skewers into traditional steak fajitas by serving on your favorite grain free tortillas. Here are mine. Or make these Whole30 by serving on a jicama wrap.
  • Rice. Make your fajitas into a bowl by serving over brown rice.
  • Beans. A side of black or pinto beans
  • Lettuce: Make your fajitas into a salad by adding the below toppings. You can also drizzle on my Dairy Free Spicy Ranch.
  • Toppings. Add avocado, salsa, or cilantro to round out any of the above.

How to cook Skewers without a grill

  • Make these steak fajita skewers on the stovetop by making them “skewerless” using a large cast-iron or other heavy skillet.
  • Heat your skillet over medium heat. Add a tablespoon of avocado oil to the pan and add in the peppers & onions (shake off the marinade as much as you can before adding to the skillet). Cook for 2-3 minutes before adding in the steak. Cook for 6-8 minutes, flipping halfway through.

Healthy Steak Fajita Skewers

Fajita-style steak grilled on skewers with veggies. A delicious steak skewer recipe that’s easy to make and sure to please!

Ingredients
  

Fajita Marinade

  • 1/4 C Coconut Aminos
  • 1/4 c fresh lime juice 2-3 limes
  • 1/4 C orange juice
  • 1/4 C avocado or olive oil
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Steak Skewers

  • 1 – 1.5 lb steak kabob meat sub: sirloin cut into 1 inch cubes
  • 1 red bell pepper, cut into 1 inch wide chunks
  • 1 green bell pepper, cut into 1 inch wide chunks
  • 1 red onion, cut into 1 inch wide chunks

Optional for Serving

  • 8 tortillas
  • 1 avocado
  • salsa
  • cilantro
  • rice or beans

Instructions
 

  • In advance: Prepare your marinade by mixing all of the ingredients together in a bowl. Place steak in a baggie or baking dish & pour over marinade. Cover & store in the refrigerator. Marinate for a minimum of 30 minutes, up to 12 hours.
  • When Ready to cook: heat your grill to400°. Thread onions, peppers & steak onto skewers.
  • Lightly oil the grill, then place the kabobs on the grill, cover, and let cook for 3-4 minutes, then flip & repeat. Cook until internal temp reaches 145° for medium well .
  • Serve with tortillas, salsa, fresh cilantro and avocado or swap the tortillas and serve over rice with beans. Enjoy.
