Peach & Tomato Bruschetta

Ingredients
  

  • 1 C cherry tomatoes, diced
  • 1 C peaches, diced
  • 1 Tbsp olive oil
  • 2 Tbsp balsalmic vinegar
  • 1 Tbsp shallot, diced
  • 1 tbsp fresh mint, thinly sliced
  • salt to taste
  • mascarpone cheese
  • 1 baguette
  • balsamic glaze garnish

Instructions
 

  • In a bowl combine: tomatoes, peaches, shallots, olive oil. balsamic vinegar, mint & salt.
    Allow mixture to marinate in the fridge for at least 15 minutes, up to 2 hours. Stirring frequently.
  • When ready to serve: Slice Baguette. Drizzle with olive oil & toast. GRILLING INSTRUCTIONS: Toss on preheated grill (400°) for 3-4 minutes per side. Watch closely. OVEN INSTRUCTIONS: Preheat oven to 400° place slices on baking sheet & allow to toast for 6-8 minutes. Watching closely
  • Assemble: Spread a dollop of mascarpone cheese onto baguette. Top with bruschetta. Drizzle with balsamic. Enjoy!
