I love cooking up a big batch of pork in the crock pot and re-purposing it for different meals throughout the week. These stuff sweet potatoes are an excellent way for an easy dinner and boy are they FILLING.
This recipe is great for Meal prep as you can make both the pork & the baked potatoes in advance.
Whole30 BBQ Stuffed Sweet Potatoes with Slaw
Equipment
- Instant Pot
Ingredients
- 4 C shredded pork (see notes for recipe) sub: shredded chicken
- 2 large sweet potatoes or 4 small
- 1 C Whole30 BBQ Sauce
Whole30 Slaw
- 2.5 C shredded cabbage or coleslaw mix
- 1/4 C cilantro, chopped
- 1/2 C Whole30 Mayo
- 1 Tbsp coconut aminos
- 1 tbsp apple cider vinegar
- 1/2 tsp dijon mustard
- 1/4 tsp celery seed
- salt to taste

Sweet Potatoes
- Instant Pot: Add 1 C water to the instant pot. Puncture the sweet potatoes with a knife. Place in instant pot on the steam rack. For Large Sweet Potatoes, cook on manual for 25 minutes. For Medium to small sweet potatoes cook on manual for 15-20 minutes.
Whole30 Coleslaw
- In a bowl combine the mayo, coconut aminos, vinegar, mustard, & celery seed. To the bowl add the shredded cabbage & cilantro. Stir to combine. Salt to taste & Refrigerate until ready to serve.
Assemble
- Combine BBQ Sauce & pulled pork. Toss to coat.
- Slice sweet potatoes down the middle. If using large sweet potatoes, 1 half is one serving. Top the sweet potato with the pulled pork & coleslaw. Drizzle with extra BBQ and enjoy!
