Heat the oil in a large pot over medium-high heat. Add the onion & carrots. Cook until they start to soften, about 6 minutes.
Add the garlic, curry powder, turmeric & garam masala. Allow to get fragrant, about 1 minute.
Add the chicken, cauliflower and bone broth to the pot and bring it to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 mins.
Remove the chicken from the pot and shred it using 2 forks. Add the chicken back into the pot along with the kale. Stir to evenly distribute and allow the kale to cook for a few minutes to soften.
Lastly, add in the lemon juice & season to taste with salt & pepper. Enjoy!
