As soon as chorizo is involved, I’m on board. No questions asked. If Chorizo is not your thing, this recipe can be made equally as delicious with your favorite breakfast meat: bacon, sausage, ham, etc. Or do something crazy like make it vegetarian and remove the meat completely! But I REALLY think the flavor combo of this recipe is pretty killer, as is!

Grain Free Chorizo & Spinach Breakfast Quesadilla

Servings 4 people

Ingredients
  

  • 4 Grain Free Burrito size Tortillas
  • 1 lb ground chorizo
  • 4 eggs
  • 1 C grass-fed cheese sub goat cheese
  • 1/2 yellow onion, diced
  • 3 C spinach, raw
  • 1/4 C canned pinto beans optional
  • 1 tbsp avocado oil

Optional Garnish

  • pico de gallo
  • sliced avocado
  • cilantro
  • chipotle aioli drizzle

Instructions
 

  • In a large skillet over medium heat, add 1 tbsp oil. Add ground chorizo & onions. Cook until the chorizo is no longer pink & onions are translucent.
  • Add Spinach to the skillet. Mix and allow the spinach to wilt. Remove meat & veggies, set aside.
  • In a bowl,whisk together all 4 eggs. In the same skillet over medium heat, add a bit of additional oil if it's looking dry. Add the eggs and turn the skillet off completely. Stir the eggs around with a spatula slowly as they begin to cook. After eggs have cooked through, remove & set aside.
  • If using the same skillet to make your quesadilla Use a paper towel to wipe out any remaining oil & remnants. Once the pan is ready to go, Give the pan a spray with cooking spray. I prefer avocado oil spray. Place the stove to low-medium heat.
    Lay one tortilla in the pan. On one half of the tortilla, Add 1/4 C cheese, followed by the meat, veggies & egg. If adding beans, add a Tbsp or two now. Allow the quesadilla to cook for about a minute.
    As your cheese begins to melt, carefully lift up the tortilla with your spatula. If it is looking like your desired crispiness, fold over the top part of the tortilla to cover your toppings and close the quesadilla. Press down with the bottom of your spatula to flatten and secure the tortilla over the toppings.
  • Remove from heat, slice & garnish. Enjoy!
