Bone Broth is all the rage these days. It’s almost as #basic as a PSL. (Joking, but not joking 🙃) But for better reason. It’s packed with healing agents like collagen & various vitamins & minerals that promote gut health, anti-inflammation & immune system support. But most importantly- it’s delicious!

How to Save Scraps

Another perk of making bone broth: It’s a great way to use up vegetable scraps. Toss veggie & bone scraps into a stasher bag & store in the freezer until you are ready to use!


Types of Scraps to Freeze & Save:
  • Onions, Green Onions, Scallions, or Leeks
  • Fresh Herbs
  • Garlic Cloves or Ginger Scraps
  • Carrots
  • Celery – The leaves of celery hold a LOT of flavor.
  • Chicken, turkey or beef

Where to Find Bones:

  • Save the carcass from a whole or rotisserie chicken or rukery
  • Save bones from bone in breasts, wings or drumstick
  • Purchase Bones from your local meat counter.

How to Boost Nutrients & flavor

  • Add medicinal spices Black pepper and tough, woody herbs like dried bay, ginger;, curry, lemon and turmeric.
  • Roast your bones first. Roasting bones caramelizes their proteins and releases some fat. And that means a richer and more robust flavor for you. You can toss onion halves and garlic in with your bones when you roast them, and they’ll give your broth fantastic flavor.
  • Add leafy herbs at the end. Leafy herbs like parsley can give some extra flavor. Add with 10 -15 minutes left to cook.

Customize the Flavors

  • Lemon Ginger Broth Add fresh ginger & extra lemon juice .
  • Curry Broth Add ginger, curry powder or red curry paste
  • Lime cilantro: Sub Lime juice for Lemon, add cumin & finish with fresh cilantro

How to use your bone broth

  • Sip bone broth on its own, or with a sprinkle of salt and a swirl of spices and herbs. It’s an excellent protein-rich snack or appetizer.
  • Use it to make soups and stews
  • Use it to make sauces like gravy, pan sauce or reduction sauces.
  • Cook rice or grains in bone broth for a boost of flavor and protein.

Broth Storage

  • Recycled Glass Jars: Save glass jars from things like marinara, mayonnaise, etc.
  • Weck Jars
  • Store in the Fridge for 5 days or freezer for up to 3 months.

Basic Bone Broth

Prep Time 10 minutes
Cook Time 6 hours
Total Time 6 hours 10 minutes
Servings 4 people

Ingredients
  

  • 2-3 Lbs chicken, beef or turkey bones
  • 2-3 carrots
  • 3-4 celery stalks, with leaves
  • 1 onion sub: shallots, green onions or leeks.
  • 2-3 cloves garlic
  • 1/2 lemon, juiced extra for a more lemony broth
  • 1 bayleaf
  • 1-2 Tbsp apple cider vinegar
  • 1 tbsp black peppercorns
  • 1/2 tsp turmeric
  • 1 handful fresh herbs

Instructions
 

  • Optional: Preheat oven to 350°. Place bones, onions & garlic on a cooking sheet. Roast for 30-45 minutes.
  • Place all the ingredients in a large stockpot & cover with water. Bring to a boil.
    Lower to a simmer and allow to cook for at least 2 hours. For Best results cook for 6 -8 hours. Cook LOW AND SLOW. Do not add any additional water.
  • When the broth has completely cooked. Strain the broth into glass containers and allow at least 2 inches of space if you plan to freeze the broth.

Notes

For the Instant Pot: Place all ingredients in IP. Cook on manual for 90 minutes. I find this method is not as flavorful as stovetop cooking. 
Kid Friendly: Cook Pasta, rice or vegetables in broth for added protein. Blend into a puree with vegetables. Or Allow little one to sip from a cup!
