I’m in my hot and healthy era and ground turkey has the macros I’m looking for, so I was determined to make it work. The secret ended up being two things I added to the original recipe: a full packet of taco seasoning (not half — we are NOT doing half) and two big spoonfuls of tomato paste that completely changed the flavor game. The green chiles and bone broth do the rest.

Why This Recipe Actually Works

The problem with most ground turkey taco recipes is that turkey is lean — which is great for your macros and terrible for flavor if you’re not intentional about it. This recipe fixes that by:

  • Simmering low and slow with bone broth (Kettle & Fire is my go-to) to keep the meat juicy instead of crumbly
  • Adding tomato paste for depth and a little richness — this is my addition and I’m obsessed with what it does

What You Need

For the Turkey:

  • 1 lb organic ground turkey
  • 1 full packet Siete Foods taco seasoning (yes, the whole thing)
  • 2 TBSP tomato paste (my addition — do not skip)
  • 1/3 cup bone broth (Kettle & Fire) or water
  • 1 can mild green chiles

For the Tacos:

  • Siete Foods crunchy or soft tortillas
  • Chopped romaine
  • Chopped tomato
  • Diced avocado
  • Plain Greek yogurt (your sour cream but make it high protein)
  • Sky Valley Taco Sauce (grab it at Whole Foods — you need this in your life)

How to Make It

1. Brown your turkey. Heat a drizzle of olive oil in a pan over medium-high heat. Add your ground turkey and break it up as it cooks. Don’t rush this step — you want it fully browned, not gray and sad.

2. Add the good stuff. Once the turkey is browned, stir in your tomato paste first and let it cook for about a minute — this caramelizes it slightly and adds SO much flavor. Then add the full packet of taco seasoning, the green chiles, and your bone broth. Stir to combine.

3. Simmer. Turn the heat down to low, cover the pan, and let everything simmer for about 10 minutes. This is where the magic happens — the turkey soaks up all that flavor and stays juicy instead of drying out.

4. Chop your toppings. While the turkey does its thing, chop your romaine and tomato and dice your avocado. Warm your tortillas if you’re doing soft, or pop your crunchy shells in the oven at 350°F for a few minutes.

5. Build your tacos and enjoy. Load them up. Don’t be shy with the Greek yogurt — it’s doing the work of sour cream with way more protein. Hit everything with a generous pour of Sky Valley taco sauce.

Tips & Swaps

  • Not a turkey person? Ground chicken works great here too. Ground beef also works — it’ll be richer and a little more forgiving flavor-wise, but you’ll lose some of the lean protein benefit.
  • Bone broth vs. water: Bone broth adds extra flavor and a little collagen — worth it if you have it on hand. Water works fine in a pinch.
  • Make it ahead: The turkey filling holds up beautifully in the fridge for up to 4 days. Reheat on the stovetop with a tiny splash of broth to keep it from drying out. This is genuinely a great meal prep situation.
  • Tortilla choice: My kids are hard shell people all the way. I’m a soft shell person. We do both and it’s one of the rare moments where everyone is happy.
  • Greek yogurt instead of sour cream: I know it sounds like a wellness girlie swap but honestly the texture is so similar and you’re getting way more protein. I layer it on the BOTTOM of the tortilla with the ground turkey on top and the way it gets warm just makes it 10X better.

  • 2 tbsp tomato paste
  • 1/3 c. chicken bone broth
  • 1 small can mild green chiles
For the Tacos
  • Crunchy taco shells
  • chopped romaine
  • diced tomato
  • plain greek yogurt or sour cream
  • taco sauce

Method
 

  1. Heat olive oil in a pan over medium-high heat. Brown the ground turkey, breaking it up as it cooks.
  2. Add tomato paste and stir for 1 minute.
  3. Add taco seasoning, green chiles, and bone broth. Stir to combine. Then Reduce heat to low, cover, and simmer for 10 minutes.
  4. While turkey simmers, chop romaine, tomato, and avocado. Warm tortillas.
  5. Build your tacos. Top with Greek yogurt and Sky Valley taco sauce.
